Sausage and Arugula Frittata

- 8 oz sausage breakfast or Italian work well
- 4 eggs add 2 more eggs if you prefer a more substantial egg dish
- 1 tbsp heavy cream
- 1 tbsp water
- 1 dash hot sauce tabasco or cholula
- 3 scallions chopped
- 2 handfuls arugula spinach also works well
- 2 tbsp parmesan cheese shredded or grated
- 1.4 cup Swiss or gruyere shredded
- 1 teaspoon harissa paste for serving, optional
In a large, ovenproof skillet brown the sausage
While the sausage is browning, mix together eggs, heavy cream, water, hot sauce, beat well. Set aside. Chop scallions.
When the sausage has browned, add scallions
Then add arugula or spinach
Sprinkle the cheeses.
Pour egg mixture over the top.
Bake in oven for 9-10 minutes until puffy and set

Top with harissa if desired
