Sausage and Arugula Frittata

Equipment

  • Preheat oven to 425

Ingredients

  • 8 oz sausage breakfast or Italian work well
  • 4 eggs add 2 more eggs if you prefer a more substantial egg dish
  • 1 tbsp heavy cream
  • 1 tbsp water
  • 1 dash hot sauce tabasco or cholula
  • 3 scallions chopped
  • 2 handfuls arugula spinach also works well
  • 2 tbsp parmesan cheese shredded or grated
  • 1.4 cup Swiss or gruyere shredded
  • 1 teaspoon harissa paste for serving, optional

Instructions

  • In a large, ovenproof skillet brown the sausage
  • While the sausage is browning, mix together eggs, heavy cream, water, hot sauce, beat well. Set aside. Chop scallions.
  • When the sausage has browned, add scallions
  • Then add arugula or spinach
  • Sprinkle the cheeses.
  • Pour egg mixture over the top.
  • Bake in oven for 9-10 minutes until puffy and set
  • Great served with 90 second keto bread
  • Top with harissa if desired
