Sausage and Arugula Frittata
great for brunch, lunch, or dinner

- Preheat oven to 425
Ingredients
- 8 oz sausage breakfast or Italian work well
- 4 eggs add 2 more eggs if you prefer a more substantial egg dish
- 1 tbsp heavy cream
- 1 tbsp water
- 1 dash hot sauce tabasco or cholula
- 3 scallions chopped
- 2 handfuls arugula spinach also works well
- 2 tbsp parmesan cheese shredded or grated
- 1.4 cup Swiss or gruyere shredded
- 1 teaspoon harissa paste for serving, optional
Instructions
- In a large, ovenproof skillet brown the sausage
- While the sausage is browning, mix together eggs, heavy cream, water, hot sauce, beat well. Set aside. Chop scallions.
- When the sausage has browned, add scallions
- Then add arugula or spinach
- Sprinkle the cheeses.
- Pour egg mixture over the top.
- Bake in oven for 9-10 minutes until puffy and set
- Great served with 90 second keto bread
- Top with harissa if desired
