Planning for my first in-person cooking class. How fun is that? They have requested the menu and it will not be in my kitchen, but I will be among friends. So, time to plan…

Menu:

Antipasto- think veggies and olives not heavy meats

Penne alla Vodka– old school and decadent. Will I have palmini or will I indulge?

Salad with balsamic dressing or should we go classic Caesar?

Will there be red wine?

A decadent dessert? Lemon or chocolate?

Another vegetable? That just seems wrong.

The planning has begun. One thing for sure, there will be a trip to my favorite butcher to get some extra special ingredients. More info to follow!

Penne Alla Vodka with Sausage

One pan, easy, hearty meal
Course: Main Course
Cuisine: Italian
Servings: 4

Ingredients

  • 1 pounds Italian sausage removed from casing
  • 1 medium onion diced
  • 3-4 cloves garlic fresh, grated or minced
  • 1 28 oz can crushed tomatoes
  • 1/3 cup heavy whipping cream
  • 1 pound penne pasta or other sturdy pasta
  • 1/2 cup fresh basil
  • 1/2 cup vodka
  • 1/4 cup Parmesan cheese fresh grated
  • 1/2 teaspoon salt or to taste
  • 1 pinch crushed red pepper flakes

Instructions

  • In a large skillet, sautee sausage until browned
  • While sausage is browning, boil a large pan of water for pasta
  • Remove sausage from skillet, set aside
  • Add diced onion to the skillet, cook until golden brown, add minced garlic and crushed red pepper. Stir for 30 seconds until fragrant
  • Add vodka, stir, add crushed tomato, salt and pepper. Simmer for 30 minutes.
  • Add pasta to pasta water and cook until al dente, drain pasta. Let sauce continue to simmer while pasta cooks.
  • Add pasta to sauce, add cheese and fresh basil and mix to incorporate.
  • Serve!
