There are times when a light lunch needs to be something more than a cold salad. A quick veggie sauté hits the spot. If you’re one of those people who are inclined to “put an egg on top” this would make a lovely base for a fried egg. And the sauté pan is out and dirty, so may as well drop an egg in after the zucchini is plated. This would also be a great side for fish, chicken, or a steak. If cutting matchsticks is not your thing, zoodles would be a great option.
Zucchini
Ingredients
- 1 Zucchini cut into matchsticks
- 2 tbsp olive oil
- 2 tbsp slivered almonds
- 1/4 tsp garlic powder
- 1 pinch crushed red pepper
- Romano cheese shaved
Instructions
- Heat olive oil in a large skillet. Add almonds to pan. Toast until they start to brown
- Add zucchini, garlic powder, salt, and crushed red pepper
- Sautee quickly on high heat until heated though, approximately 2 minutes.
- Serve topped with shaved Romano cheese
