Salsa chicken is a fast and easy meal with an Instant Pot. If you’re into crockpots, that will work but take longer. If you don’t have either of these small appliances, stove top will work. I have used a variety of red and green jarred salsas and it’s always fine. I recently grabbed a jar of Frontera Salsa Tomatillo and WOW!! To think, I have been fiddling around adding fresh lime juice, cumin, garlic, cayenne, etc. with various salsas to get it just right. All I needed was the best jar on the shelf.
Just in case you’re wondering, what is Salsa Chicken and what do you even do with it… let us count the ways. Basically Salsa Chicken is cooked in salsa until it can be shredded. From there serve over cauliflower rice or a salad and top with your favorite taco toppings. Tonight, I had butter lettuce which does not hold up well to be topped with something hot. I had cauliflower rice on hand but didn’t have lime juice so I opted not to make cilantro lime cauli-rice. I wasn’t expecting much by melting a bit of cheddar on top, a little hot sauce and a dollop of sour cream. But it turned out to be a great dinner. Great post work out protein, some melty cheese, a good hit of spice, and a bit of cooling. Unexpectedly blog worthy. Not very pretty but quite tasty. I may get Crepini Egg Thins with Cauliflower to make enchiladas next time. Or maybe just serve it over cilantro lime cauliflower rice with guacamole. If you’re not keto- rice, corn tortillas, flour tortillas can round out your dinner.
I started with 2 frozen chicken breasts and a jar of Frontera salsa. I added it to the Instant Pot with a sprinkle of salt. I set the timer to 11 minutes. Of course, starting with frozen chicken increases the time for the IP to get up to pressure but the set cooking time remains at 11 minutes. Less than 30 minutes later I had a great dinner.
