  • waffle iron I prefer a Mini Dash

Ingredients

  • 3/4 cup mozzarella cheese shredded
  • 1 egg
  • 2 teaspoons coconut flour
  • 2 tablespoons Swerve
  • 1/2 tablespoon butter melted
  • 1.5 tablespoons cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon psyllium husk powder
  • 1/4 teaspoon baking powder

Instructions

  • Melt the butter in a 2 cup glass measuring cup
  • add all other ingredients to cup, stir until well combined
  • cook waffles on a mini dash for approx 2.5 minutes each

Notes

In a Mini Dash, this makes 4 chaffles for 2 sandwiches. 
As the waffles are cooking, in a microwave safe bowl, soften a tablespoon or two of cream cheese. Add Swerve and vanilla extract to the cream cheese. Add a splash of HWC or almond milk to thin as desired. For a nice change I use caramel stevia drops in place of vanilla.
