What’s a chaffle? A cheese waffle, of course! It’s been pretty popular with the keto peeps over the past couple years. The basic chaffle recipe uses only cheese and an egg. Then it’s cooked in a waffle maker, like the adorable Mini Dash. I like to add either coconut flour or almond flour to add a bit more texture. Now from there it’s so fun to experiment with different flavors. I hadn’t played around with chaffles in a while but broke out the Mini Dash recently mostly to use up some eggs in the refrigerator that were close to expiring.

Bringing the eggs to room temperature results in a less eggy taste to the finished product. I like to use cream cheese for sweet chaffles, although it’s great for savory ones as well. Mozzarella is surprisingly neutral tasting for sweet ones. Cheddar adds a very rich flavor to a savory version. Chaffles can be used like bread to sandwich ingredients together. They can be a grab and go meal. Or even eaten as a more traditional waffle with a sugar free syrup.

Start with the basic and add some flavorings. Some sweet ideas include vanilla extract, maple extract, a teaspoon of cocoa powder, or cinnamon. For savory versions mozzarella cheese or cheddar cheese are a good cheese to start with. Bacon bits, cheddar, and pickled jalapeno is an amazing combination. Garlic powder and smoked paprika is tasty. Coconut flour has a mild flavor and makes a soft textured chaffle. Almond flour is a bit richer and denser in textures.

Ingredients

  • 1 egg ideally room temperature
  • 1 oz cream cheese or 1/4 C shredded cheese
  • 2 teas coconut flour or 1 tbsp almond flour
  • 1/2 teas baking powder

Instructions

  • Mix all ingredients in a small bowl or coffee cup
  • Pour half of batter in waffle maker. Cook 3-4 minutes
  • Repeat with remaining batter
