Caesar Dressing

lemony and slightly creamy

Equipment

  • Glass jar
  • Mircoblade or grater

Ingredients

  • 1/4 cup mayo commercial ok, homemade preferred
  • 2 cloves fresh garlic large
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Dijon mustard
  • 1/2 cup olive oil extra virgin
  • 1/4 cup lemon juice fresh squeezed
  • 1 lemon zest
  • salt
  • pepper fresh ground
  • hot sauce to taste

Instructions

  • Add mayo to jar. Zest a bit of lemon over jar. Squeeze fresh lemon juice. Add to jar.
  • Zest/grate garlic over jar. If you don't have a zester put your garlic cloves on a cutting board to mince adding a bit of salt to help break the garlic down.
  • Add rest of ingredients then shake well.

Notes

Serve dressing over romaine with freshly grated Parmesan cheese. Top with croutons or Whisps cheese crackers.
