Chaffles, cheese waffles, are always a great breakfast. It takes a few minutes to cook but clean-up is a breeze. Enjoy! If you don’t have a waffle maker these can be cooked in a skillet as pancakes.

Ingredients

  • 1 tbsp cream cheese softened
  • 1 egg at room temp
  • 1 tsp Swerve
  • 1 tsp coconut flour
  • 1/2 tsp baking powder
  • 1 tsp lemon extract
  • 1 handful fresh blueberries frozen would work

Instructions

  • Heat up waffle iron. I use a Mini Dash for 4" diameter waffles. In a mug or pyrex soften cream cheese for a few seconds in the microwave or soften at room temperature.
  • Add your egg and mix well. If the egg is not at room temperature it may not mix well with the cream cheese. I like to take my egg out of the refrigerator 20-30 minutes before making chaffles.
  • Mix in all other ingredients, except blueberries to get a smooth batter. Then add blueberries and stir gently.
  • In the Mini Dash, cook chaffles for approximately 3 minutes. Serve with a little bit of butter and Lecanto maple flavored, sugar free syrup, if desired.
