The successful rice bowl will be keto friendly, made from clean ingredients, while offering a variety of textures and flavors. Sounds easy, right?

Chicken Cauli Rice Bowl

The base of this bowl is mixed salad greens. For more crunch try chopped romaine or slaw mix. Cilantro lime cauliflower rice was easy since I started with a pre-made shelf stable bag of cauliflower. I simply drained it. Then a quick sauté in some butter, a little salt, pepper, some lime zest, the juice of a lime, and some fresh chopped cilantro. My chicken tenders were marinated for 20 minutes with Coco Loco taco seasoning, salt, a little lime juice and some olive oil. I’m still working on the perfect cilantro lime ranch dressing. Stay tuned for details on the perfect creamy dressing. In the mean time, your favorite ranch or cilantro dressing will stand in. Some slivered almonds were added after the photo to add some more crunch.
