Yes, it’s a thing! There are plenty of recipes for fat head dough. This last experiment was not exactly what I was looking for. It puffed up but browned too fast. Still tasty! Pepperoni and kalamata olives were too rich with the fat head dough. Next time I will figure out a better balance to my toppings. Fat head dough is a combination of mozzarella and cream cheese which is melted, then almond flour, seasonings, and an egg are added. I added a bit of garlic powder for flavor and some baking powder to puff/lighten the crust up. I had the ingredients on hand, a big plus these days. It was easy to make and satisfied my pizza craving. An added bonus is that I have half of the dough pre-baked and ready to go for another meal. Once perfected, I will report back with a recipe.
